snickerdoodles

Here are the super yum snickerdoodle cookies I made this morning!

3/4 Cup softened margarine
1 1/2 Cups sugar
2 eggs
1 tsp. vanilla extract
4 Cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cream of tartar
2 tbsp. sugar
1 1/2 tsp. ground cinnamon

Beat margarine at medium speed of an electric mixer until fluffy; gradually add 1 1/2 cups sugar, beating well.  Add eggs and vanilla; beat well.

Combine flour and next 3 ingredients in a bowl, stirring well.  Gradually add flour mixture to creamed mixture, mixing well.  Cover and chill 2 hours.

Combine 2 tbsp. sugar and cinnamon in a small bowl; set aside.

Shape dough into 1-inch balls; roll balls in sugar mixture.  Place balls 2 inches apart on cookie sheet.

Bake at 400 degrees for 8 minutes or until cookies are very lightly browned.  Cool slightly on cookie sheets.  Remove from cookie sheets, and cool completely on wire racks. And enjoy!
