holiday sweets: emma from red velvet art

I am so very excited to introduce a little baking mini-series that will be running all week! I’m calling it Holiday Sweets and thanks to five extra sweet ladies, there will beĀ  a delicious recipe waiting for you each evening! Perfect for taking

Our first yummy recipe comes from Emma. She is a member of team Red Velvet and the genius behind their Sweet Shop. If you ever find yourself in Springfield, MO make sure you stop by for delicious bubble tea and at least one cupcake!

Here is my recipe:
First off, I’m a bit of cheat because I have found that my favorite way to create the caramel apple base is to use the pre-made caramel sheets you can buy at the grocery store. I’ve attached a picture in case you have no idea what I’m talking about.

Caramel Wraps

You simply wash and de-stem your apple, cover it in the caramel sheet and shove a lollipop stick in the top. Now place your apple(s) on a parchment paper lined baking sheet and bake in the oven at 200 F for 5-6 minutes.

Now you are ready for the chocolate part. My favorite part. :) First chop up your candy choice and have the pieces ready on a plate. I made five caramel apples (pictures attached) so for two of them I used chopped up Reese’s Peanut Butter Cups, for another two I used chopped up Heath bars, and for the last one I used a chopped up Snickers bar. Chopped peanuts are good too, or sprinkles, or marshmallows. Get creative.

Caramel Apples

In a microwave safe bowl melt 10 ounces of chopped dark or semi-sweet chocolate plus 1 tablespoon vegetable oil. I find it’s best to microwave for 30 seconds, stir, another 30 seconds, stir and continue until chocolate is creamy. Dip the caramel apple in the chocolate then roll it around on the plate of chopped candy. Place the apple back onto parchment paper and using a fork drizzle chocolate over the top of the apple too. Now put the plate with the apples in the freezer for 10 minutes so the chocolate will harden.
