Today’s sweet recipe comes from Melissa of Tiny Happy. Melissa is an all around genius lady. She keeps a delightful blog, a pretty Etsy shop, and the loveliest flickr! I especially love her kitchen photos. They are so pretty and delicious-looking all at once!
This is a classic Antipodean treat to have after dinner with coffee, take hiking, or wrap nicely and give as gifts at Christmas time.
It’s simple and quick, and I usually have the ingredients on hand, which means it’s dangerously easy to make at any time!
Chocolate Fudge Slice
Ingredients:
1 packet (about 1 1/2 cups) of plain biscuits (cookies), like ‘vanilla wine’ or ‘milk arrowroot’ (not sure if you have those in the US?)
125 gm (8 tbsp) butter
2/3 cup plain sugar
3 Tb cocoa
splash of vanilla extract
1 large free-range egg
1/2 cup long thread coconut
Melt together the butter and sugar, stirring until sugar is mostly dissolved.
Leave to cool, then beat in the vanilla, cocoa and egg.
Crush the biscuits (I do this by placing them inside a plastic bag and hitting them with a rolling pin.) You want them to be well broken up but with some bigger pieces remaining.
Add the broken biscuits with the coconut to the butter mixture. Press into a large baking tin that has been lined with greaseproof paper. Press down with your hands until the surface is even and compact.
Refrigerate until firm, then ice with a thin layer of chocolate icing. (I make this by mixing together 1 cup icing sugar, 2 Tb cocoa, 1 Tb soft butter, and a splash of boiling water until smooth.)
When the slice has completely set, lift out onto a chopping board, and slice into small triangles. Can be stored in an airtight container in the cupboard, or the fridge (in summer.)
