It’s a bright, cold wintery day and we’re still fighting off our colds a little so I am extra glad I made a batch of split pea soup last night! I tried a new recipe and it’s the easiest thing in the world! There’s nothing quite so nice as homemade soup, I think.
My prescription for a yummy lunch: homemade split pea soup and grilled cheeses. I used a sharp cheddar and monterey jack on sourdough.
Here is the recipe in case you’d like to try it for yourself!
What you need:
8 cups water
2 cups green split peas
1 stalk of celery (chopped)
1 large carrot (chopped)
1 small onion (chopped)
1/4 teaspoon thyme
1 good dash red pepper
1 bay leaf
Salt
How to make it:
Combine water, peas, celery, carrot, onion, thyme, red pepper, and bay leaf in large kettle. Season to taste with salt. Boil vigorously 20 minutes, then reduce heat, cover, and simmer until split peas are tender. Press soup through fine sieve and reheat just to boiling point.
