chicken and leek pie

I like to use a little of my weekends to try new recipes. They get bonus points if it’s something that can be popped in the oven for dinner on a weeknight when picking something up on the way home is just way too tempting.

I had a few spare hours on Sunday afternoon so I made the filling for a chicken and leek pie. I tweaked a recipe that I found on the Jamie Oliver forums which, in turn, was a modified version of this recipe.

Here’s how I made it…

What you need:
a bit of Olive Oil
2 Knobs of Butter
1 lb of Chicken (I used chicken breasts)
2 Leeks (washed well and sliced into 1/2 inch slices)
2 Carrots (peel and roughly chopped)
3 Celery (finely sliced)
Mushrooms (cleaned and sliced)
2 Tbsp of Flour
1 Wine Glass of White Wine
1 1/4 cups of milk
Salt
Pepper
Puff Pastry
1 Egg

 

What to do:
Heat olive oil and butter in a large pot. Add leeks, celery, carrot, chicken and fresh thyme if you have it.  Cover and cook on low for 15 minutes.

Turn the heat up and add flour, stirring for a few minutes. Add wine, a wineglass of water and milk. Season with salt and pepper.

Cover and simmer for 40 minutes until the chicken is tender. Stir occasionally. If after 40 minutes your sauce is a bit thin add a little more flour gradually, being careful to stir, until it thickens to your desired consistency. Add your mushrooms and stir to evenly distribute them.

Pour the chicken filling into your baking dish.

Note: I stored my filling in the baking dish over night. I did the the next three steps Monday evening.

Preheat your oven to 450 degrees.

Brush egg wash on to the edges of the baking dish and lay your puff pastry on top. Trim any extra and crimp the edges. Score the top of the puff pastry and brush entire puff pastry crust with egg wash.

Bake for 30 minutes or until the puff pastry is beautifully browned.

Serve with yummy peas, dish up and enjoy!

I want to try making this filling for an actual meat pie using Jamie’s savory crust. I’ll keep you posted!
