There’s a gorgeous new market in town full of amazing local produce and all kinds of nice things. On a recent visit, I pounced on some peaches. They seemed like the perfect ingredients for a recipe from Not Without Salt that I’ve been wanting to try. I switched things up a little bit and made tarts instead of the pie.
They turned out very tasty, but I’m intrigued by the description of the crust. Buttery? Flaky? Yes, I need to make that!
For my peach tarts, I used this recipe for the filling:
Tequila Peaches
1 ½ tablespoons tequila
1 tablespoon fresh lime juice
½ teaspoon lime zest
1 tablespoon cornstarch
2 large peaches, ripe and fragrant
2 tablespoons sugar
1 tablespoon heavy cream
Combine the tequila, lime juice and cornstarch in a small bowl. Slice the peaches about ¼” thin. In a medium bowl add the peaches and the juice/cornstarch mixture. Using your hands, toss to combine.
For the crust I used my trusty Jamie Oliver crust recipe.
I got to use my adorable tart tins again and they turned out delicious! We ate one a piece hot from the oven with a scoop of vanilla bean ice cream. Yum!
