I don’t think there is anything easier or tastier than whipping up a batch of pesto. I like having it on hand to toss into pastas and other dishes.
2 packed cups of basil
2 cloves of garlic, pealed
1/4 cup of pine nuts
2/3 cup of olive oil
1/2 cup of grated Pecorino cheese
salt and pepper to taste
What to do:
Put the basil, garlic, and pine nuts into a food processor. Pulse to combine.
Add half of the olive oil (1/3 cup) and blend.
Add the cheese and final 1/3 cup of oil.
Season with salt and pepper to taste.
You’ll end up with about a cup of pesto once you’re done. You can do all kinds of things with pesto. My current favorite use is to mix it with just a bit of olive oil based mayo and use it on sandwiches. So delicious!
