Another kitchen staple that I always make from scratch is pesto. Making it is really just a matter of tossing everything into a food processor and letting it do its work. It wouldn’t be more easy!
2 cups of basil leaves, washed
2 cloves of garlic
1/4 cup of pine nuts
2/3 cup of olive oil
1/2 cup freshly grated Pecorino cheese
Salt and pepper to taste
Blitz it all together and then store in the refrigerator.
You can use pesto in so many different things. I like mixing a bit with mayonnaise for warm sandwiches or using the pesto for a simple pasta sauce.
